Easy Chicken Soba Noodle Soup Recipe

This is an easy recipe for chicken noodle soup made with soba noodles. I've designed it for kids, as it lacks added salt or oils, but it's still high in flavor since its loaded with tasty and healthy ingredients.

Ingredients

- Soba noodles* (or any other kind of noodle)
- 2 chicken breasts, boneless (skin optional, but suggested for flavor)
- 3 medium carrots
- 3 celery stalks
- 1 large onion
- 6 cups of water

Directions

In a medium pot over medium heat, add the water.

Slice the chicken into long 3/4 inch pieces. You want these pieces to be small enough for the chicken juices to be extracted in the short cooking time, but long enough to later easily separate from the other ingredients. Add to the water.

Chop the celery, carrots, and onion and add to the water.

Simmer for 1-2 hours. Just jack up the heat if you want a shorter cooking time.

Strain the water and separate out the larger chicken chunks from the other ingredients. Return the water to the heat and bring to a boil. Add your pasta and cook for 9 minutes.

While the pasta is cooking, chop the chicken into bite-sized pieces (really small if you are serving a child). Either mince the remaining ingredients or grind in a food processor. Add everything back into the water and serve.

Serve with bread or crackers.

* Any type of noodle can substitute for the soba noodles. I used soba since it has a nice smooth texture that appeals to my child, and hence, he eats more! But any type of noodle will suffice and taste just as good.
