Egg in a Hole Recipe
Egg in the hole is a classic. I had it as a child, forgot about it, and a recent post on What's Cooking Dad for "One eyed monster breakfast", brought back the memories. What appealed to me about this recipe at first, was that it might interest my son in trying new foods. At two years old, he seems to have hit a wall and is no longer adventurous, only willing to take mice-bites out of things he has never had before. That is the challenge. The result: this recipe worked. He tried bacon for the first time, and liked it (who wouldn't?), and ate most of the egg. The toast was another story, but in time, I think he'll want two of these.
Ingredients you need:
- bread slice
- egg
- bacon (optional, but suggested since its one more thing for a child to try and possibly like)
Directions:
Fry the bacon until crisp and set aside. Punch out a hole in the bread (I used a champagne glass). Toast it lightly on one side in a frying pan with a little butter. Flip the toast. Break an egg into the hole and continue frying until egg is slightly hard (feel it with your finger). You don't want a runny egg, which would make a mess of the plate when broken, and be a nightmare as your child runs their fingers through it. Cut the bacon into thin strips, making them friendly for a child to hold and eat. That's it!
