Potato Pancakes Recipe
Potato pancakes are an easy winner. For children, as you've probably discovered, french fries and potato chips are heav enly. Potato pancakes are a close third, but the drawback is, a lot of the taste comes from the frying in oil (just like in french fries and potato chips). So my suggestion is, try these as a change-up to what you normally serve. They are fun and tasty.
Ingredients:
- 1 medium-sized onion
- 4 potatoes, peeled
- 2 tablespoons flour
- 1 egg
- sour cream
- frying oil (healthy canola or similar is ideal)
- salt and pepper to taste
Directions:
Grate the potatoes into thin strings with a hand grate or a food processor. Put the grated potatoes into a strainer and press out as much water as possible.
Mix the potatoes and all of the ingredients. Heat two tablespoons oil over medium heat.
Place a heaping tablespoon of the potato mixture into the frying pan, flattening and forming it in a circle. Fry until golden brown, about 4 minutes. Flip and fry the other side.
Remove from pan and place on a paper towel lined plate to soak up excess oil. Keep warm until ready to eat and place a dollop of sour cream on top of each pancake. A great side dish is apple sauce.
