Classic Baked Macaroni and Cheese Recipe

This is one of my favorite family recipes. It comes from my Mother, and she served it often. It is very easy to prepare and it tastes great. And it can even be made days (freeze it), or hours (refrigerate it), in advance.

Serves: 5-6

Age suitability: As early as 18 months (just use smaller elbow pasta) 

Cooking time: 1 hour 10 minutes

Difficulty: Very easy

Ingredients:

  • 250g pasta (elbows work great) ~ 2 1/8 cups
  • 250g cheddar cheese
  • whole milk
  • salt and pepper, to taste
  • paprika, for taste and making the final dish look great 

Cooking utensils:

  • Medium-sized pot to boil water
  • 9" x 9" x 2" baking dish 

Directions:

First, boil the past till just past firm. You don't want the pasta over-cooked. Drain.  

Cut the cheddar cheese into 1/4 inch (1 cm) square pieces.

Lightly grease a casserole dish into which you put a single layer of pasta. Pour milk until just covering the pasta. Add 1/4 of your cheese as the next layer. Add a little salt and pepper.

Repeat this for the second and third layers, but reserving extra cheese for the final layer.

Bake at 350 degrees for about 50 minutes, or until the top is crusty.

From the picture, the dish looks somewhat dry? I am more used to the dish having a lot of cheese that runs.

Daddy Cooking replied: This recipe produces a crusty, cheezy top, which is actually one of the tastier parts. And you're right, it's not as liquid, which if eaten by a young child, is probably better!

Dear Daddy Cooking, I didn't know where to post this request so here goes...how about your recipe for yogurt? I know there is a lot out there but I need a recipe that cuts to the chase and tells me what to do since I have no idea how to make it and it seems daunting. Rumour has it that your 2 year old loves your yogurt. Also your tips for making it would be helpful. Thanks!
